german honey cookies

makes about 12 cookies

-beat together molasses, maple syrup, and oil until blended, then add in flax egg, honey, and vanilla
-in a separate bowl, combine flour, baking powder, cinnamon, and salt
-gradually add dry ingredients to wet and mix (works best with an electric mixer). add more flour as needed if the dough seems a little wet.
-cover the bowl of mix and refrigerate for at least 2 hours
-preheat the oven to 350ยบ F. either lightly oil a baking sheet or line it with parchment paper.
-use a spoon to portion balls of cookie dough in your hands. the mix will be wet and stick to your hands a little, but if it's very sticky it's a good idea to dust your hands in flour before rolling them. drop onto pan in balls, or flatten a little if you want.
-bake 8-10 minutes. they will firm up as they cool so be careful not to overbake because they seem underdone.

*this is to replace 1/4 C sugar, which by all means is certainly still a fine ingredient. i just like the flavor the molasses & maple syrup bring.
**if you're feeling spicy and festive, 1/2 - 1 tsp of pumpkin spice here is also tasty.
