sunflower seed pesto
yields about 1 1/2 C
ingredients
- 1/4 C toasted sunflower seeds*
- 1 TBS minced garlic
- 4 C fresh basil (stems are ok, but make sure they aren't too thick since it'll dull the blades of your food processor/blender)
- 5/8 C oil
- S & P TT
instructions
- -toast sunflower seeds for about 10 min @ 400ºF if not already
- -chop seeds, garlic, salt and pepper in food processor
- -add basil, pulse processor while slowly pouring in oil
- -be careful not to overdo it; too much processing will begin to cook the basil & make it mushy
*or pumpkin seeds, or squash seeds, or whatever. this makes it nut-free but if you want, you can sub nuts 1:1
