sunflower seed pesto

yields about 1 1/2 C



-toast sunflower seeds for about 10 min @ 400ºF if not already
-chop seeds, garlic, salt and pepper in food processor
-add basil, pulse processor while slowly pouring in oil
-be careful not to overdo it; too much processing will begin to cook the basil & make it mushy

*or pumpkin seeds, or squash seeds, or whatever. this makes it nut-free but if you want, you can sub nuts 1:1
